Stove Temperature: Med/High Heat


Ingredients: 

  • 3-4 Ibs of fresh or frozen crawfish (cleaned)
  • 1 cup of “Kroeung”
  • 2 tbsp of minced garlic
  • 1 finely sliced jalapeño (optional)
  • 1/2 cup of sliced julienne ginger
  • 3 stocks of scallions sliced at 1 inch
  • 1 tsp of fish sauce
  • 1 tbsp of oyster sauce
  • 1 tbsp of sugar
  • 1 tbsp of curry paste/powder
  • 1 cup of coconut cream or milk
     

Step 1: Place oil in a large pan over medium high heat
Step 2: Add garlic and sauté for approximately 45 seconds
Step 3: Add “Kroeung” to heated pan and sauté for 2 minutes
Step 4: Add coconut cream/milk, curry paste/powder and cook for 2 minutes
Step 5: Add fish sauce, oyster sauce, sugar and cook for 1 minute
Step 6: Add crabs and ginger (fully coat with sauce, cover lid, and cook for approximately 10 minutes)
Step 7: Add scallions, approximately ½ cup of water and continue cooking for 10 minutes
Step 8: Check for flavor and add seasoning to match desired taste

 

Serve immediately!
